Roasted Red Pepper & Parmesan Biscuits with Fresh Basil Recipe

A Savory Breakfast Option

Roasted red pepper and parmesan biscuitsThis morning is Memorial Day which means a rare and delightful Monday to sleep in and relax. So, we decided to make a breakfast we had recently discovered from one of our local bakeries, Camino Bakery, with our own spins on it. Having recently tasted a scone with these flavors at our local farmer's market, we were inspired to try this ourselves in our little home kitchen on this sunny, start-of-summer morning!

As always, our friends at Trader Joe's have an answer for how to make our ideas just a little more attainable. This time it came in the way of a plan to make pancakes and reading the back of the box discovered their Buttermilk Pancake mix can also be used to make biscuits! So, off we went into recreating this farmer's market delight!

Roasted Red Pepper on Cutting BoardSo, we started by mixing up the biscuits just as the box suggests and then used their added ingredient suggestions for our ratio of red pepper and parmesan cheese. We did have a batch since there are only two of us, just under 2 cups of pancake mix with 1/4 cup melted butter and 3/4 cup cold milk.

Then, we added in 1/4 cup of grilled red pepper that we recently bought at Harris Teeter and have kept in the fridge for moments just like this! Then 1/4 cup of parmesan cheese was grated right into the batter and everything mixed up. For the final touch, we picked 4 leaves from our fresh basil plant on the deck and sliced it up and mixed it in.

Red Pepper Parmesan Biscuits on PanThen we dropped the batter onto a stone cookie sheet by the tablespoon, making 8 decadent biscuits (well, I hope they will be... are still cooling as I type!), and then pop them into the pre-heated 400 degree oven. Baked for 12 minutes and are lightly browned. While they cool, we are uploading the photos and the recipe so you can enjoy with us!

 

 

 

Recipe:

Serves 2-4 people, about 8 biscuits

  • 2 cups of pancake mix
  • 1/4 cup melted butter
  • 3/4 cup cold milk
  • 1/4 cup of grilled red pepper, sliced (found in jars on the canned vegetable aisle in most grocery stores)
  • 1/4 cup of parmesan cheese, grated
  • 4 fresh basil leaves, thinly sliced

Directions:

  1. Pre-heat oven to 400 degrees fahrenheit.
  2. In medium size bowl, mix pancake mix with 1/4 cup melted butter and 3/4 cup cold milk.
  3. Add the sliced grilled red pepper and grated parmesan cheese to the dough batter until thoroughly combined.
  4. Lightly mix in the sliced, fresh basil leaves to complete the batter.
  5. Drop the batter by the tablespoon onto a stone (or metal) cookie sheet, spaced about am 3/4" from one another.
  6. Place in the oven and bake for 12 minutes, until lightly browned. Serve warm.

These biscuits sound so

These biscuits sound so yummy!  I cannot wait to try out this recipe.  They are such a creative idea.  I think that in addition to breakfast, they would also taste amazing with soup.  I think one of the most important ingredients that you would have to use for these biscuits would be fresh basil.  I do not think that powdered basil will do your biscuits any favors.  The flavor will only be there slightly if you do not use fresh herbs. 

I think many people work hard to get their biscuits in a certain, perfect looking round hockey puck shape.  I like the fact that in this recipe, you recommend making drop biscuits.  Drop biscuits are super easy, and look good.  Some people think that because drop biscuits have no real shape that this makes them look cheap or tacky.  This is not the truth, and this is especially not true with the biscuits in this recipe.  These biscuits have little flecks of beautiful red pepper and a naturally butter flavor and subtle color. 

Some people think that it is a good idea to roast your own red peppers.  You can, but then you have to jar them and vinegar them.  I mean who has time to manage so many things like that?  I think just buying some canned or jarred in vinegar is sufficient.  Nowadays, you can choose vinegar soaked red peppers, or you can get them roasted in oils and seasonings, with no vinegar.  I think both presentations would be ideal for most recipes.  However, it is important to keep in mind though that vinegar can sometimes take away from your dishes and overpower the other flavors that you are trying to highlight.
